Apple-Cinnamon Coffee Cake

Hello hello! So I just made this a little while ago and I am in love with it. It is amazing. So I am here to share the wonderful recipe with you and then you can go make it right away!

Apple-Cinnamon Coffee Cake

Serves 12

Cake:
1 1/2 cups all-purpose flour
1 cup granulated sugar
1 1/2 teaspoons baking powder 
1 1/2 teaspoons ground cinnamon
1/2 teaspoon salt
3/4 cup milk
2 tablespoons butter, melted
1 teaspoon vanilla extract
1 large egg, lightly beaten
1 cup diced peeled apple (I used Gala)
Cooking spray

Streusel:
1/4 cup packed brown sugar
2 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
2 tablespoons chilled butter, cut into small pieces


1. Preheat over to 350.

2. To prepare cake, lightly spoon 1 1/2 cups all-purpose flour into dry measuring cups; level with knife. Combine flour, sugar, baking powder, and cinnamon, stirring with a whisk. Make a well in center of mixture. Combine milk, melted butter, vanilla, and egg, stirring with a whisk; add to flour mixture, stirring just until moist. Fold in apple. Pour batter into an 8-inch square baking pan coated with cooking spray.

3. To prepare streusel, combine brown sugar, 2 tablespoons flour, and 1/2 teaspoon cinnamon, cut in butter with 2 knives until mixture resembles coarse meal. Sprinkle streusel evenly over batter. Bake at 350 for 45 minutes or until a wooden pick comes out clean.

Cool 5-10 minutes. I then sprinkled powdered sugar over the top.

So, YUM! This took maybe 8 minutes to prepare. So its super easy and delicious!

Sun Flares and Bokeh

Hello hello! Around 4:45 when I was doing the dishes I looked out the window and saw a gorgeous sunset.
So of course I ran outside in my slippers without a coat and froze my butt off to get some pictures. Lets take a look...


So I think out of all the pictures I took this is my favorite because of the bokeh and sun flare. But The propane tank and house really draw the eye away from it. I wish I had the skill in photoshop or any other editing system to get rid of them but I don't :(

This was taken right around the same time and is another one of my favorites.


This one was taken maybe 10mins later when the sun had gotten lower. It made for some great silhouettes!
