Golden Summer

Summer weather around here is perfect even though it gets too hot which would in fact be the perfect weather for swimming but we only have a baby pool so its not too refreshing. And for our local pool its now $5 to get in and I really don't want to pay that much to go to the pool to go swimming for only 2hrs or less. But anyway time for summer golden hour sun flares!

We were leaving a soccer game and my sister handed me her camera and ran off to do who knows what and I wa-la, the golden hour happened! I took some pictures and got this one, with fairy dust magically coming from the sun.

And this one with a sun flare and some bokeh. I love it when that happens :)

I am hoping to participate in Scavenger Hunt Sunday tomorrow night but since I will be at a soccer tournament all day that I may or may not be playing in we will see what happens :)

Happy Valentines Day! Its a day late but since I didn't get around to doing a post yesterday I figured late is better then never! If we get candy its just simple stuff here are a few things we got...

Sweet tart hearts...

Heart marshmallows... I put mine in hot chocolate.

And no I did not Photoshop the marshmallow in!

Heart lollipops...

Out of all the candy I got, the chocolate with almonds was the best. Everything else was pretty much so-so or just icky. But everything made for a fun photo shoot!

Snow, Snow, & More Snow

Hola! It is finally warm here! In the mid 30's I think.

It has been snowing everyday for the past week so its really pretty outside. So far I have only taken a couple photos today, here they are...

When you walk outside this is what you see.

I don't know about you guys, but I LOVE shoveling.

But since I have a hurt knee my dad won't let me.

Apple-Cinnamon Coffee Cake

Hello hello! So I just made this a little while ago and I am in love with it. It is amazing. So I am here to share the wonderful recipe with you and then you can go make it right away!

Apple-Cinnamon Coffee Cake

Serves 12

Cake:

1 1/2 cups all-purpose flour

1 cup granulated sugar

1 1/2 teaspoons baking powder 

1 1/2 teaspoons ground cinnamon

1/2 teaspoon salt

3/4 cup milk

2 tablespoons butter, melted

1 teaspoon vanilla extract

1 large egg, lightly beaten

1 cup diced peeled apple (I used Gala)

Cooking spray

Streusel:
1/4 cup packed brown sugar
2 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
2 tablespoons chilled butter, cut into small pieces


1. Preheat over to 350.

2. To prepare cake, lightly spoon 1 1/2 cups all-purpose flour into dry measuring cups; level with knife. Combine flour, sugar, baking powder, and cinnamon, stirring with a whisk. Make a well in center of mixture. Combine milk, melted butter, vanilla, and egg, stirring with a whisk; add to flour mixture, stirring just until moist. Fold in apple. Pour batter into an 8-inch square baking pan coated with cooking spray.

3. To prepare streusel, combine brown sugar, 2 tablespoons flour, and 1/2 teaspoon cinnamon, cut in butter with 2 knives until mixture resembles coarse meal. Sprinkle streusel evenly over batter. Bake at 350 for 45 minutes or until a wooden pick comes out clean.

Cool 5-10 minutes. I then sprinkled powdered sugar over the top.

So, YUM! This took maybe 8 minutes to prepare. So its super easy and delicious!

The last week or so I have been taking a lot of pictures of Billie and have decided to share a few of my favorites! 

A little about Billie:

Shes very moody.

She talks a lot.

She loves carrying socks around the house and leaving them in odd places.

She is mean but at the same time totally awesome.

She hates when we have get new cats in the house.

Adorable right? She has been with us since she was a little kitten and will be for a long time to come.
