Migas

Hello hello! 

Today I am sharing a recipe that I made on Sunday, it is called Migas.

It is basically a flavorful scrambled egg dish made fabulous with the addition of veggies, corn tortillas and lots of cheese. The ingredients list is enough for 6 servings but I adjusted it so it would be just enough for two people.

Ingredients:

1 medium onion

1 red bell pepper

1 green bell pepper

4 tomatoes

1 or 2 jalapenos

10 to 12 large eggs

1/4 cup half and half

Salt and pepper to taste

4 corn tortillas

Canola oil for frying

1 TBS olive oil

1 TBS butter

2 cups grated cheese

1/4 cup chopped cilantro

1/4 cup sour cream

Begin by roughly chopping the onion, bell peppers, and tomatoes.

I would have chopped the tomatoes but we only had frozen ones so they were already in chunks.

Then some eggs and just a splash of half and half. Whisk lightly. Season with salt and pepper to taste.

In a small skillet, fry the corn tortillas in canola oil until just barely crisp. Don't overbrown.

Drain the fried tortillas on a paper towel, then place on a cutting board. With a sharp knife, cut the tortillas into strips, then turn them the other way so they are in squares. Set aside.

In a skillet over medium-high heat, cook the onion and bell peppers in the olive oil until they develop a little color. You want the veggies to have some brown and black areas, but not be soggy of soft.

And I forgot to take the next picture, but you will want to put the tomatoes in and cook for 1 minute.

Then throw in the tortilla chips. Stir the mixture and reduce heat to low.

When the skillet has cooled slightly, pour in the egg mixture.

mix little by little, making sure it doesn't stick to the bottom.

When the eggs are cooked throw in the cheese and plenty of chopped cilantro (I forgot the cilantro...).

Now this picture really doesn't do much justice, it was SO much better then it looked. Next time I will have to put more thought into it.

Now I did actually right down my parents and little sisters reactions so here they are:

Mom - Mmm, very tasty. I like the veggies, but needs more green.

Dad - Tortilla needs to be added later. Its wonderful, though.

Lil' Sis - Mmm! Its SO GOOD! I love it!!!

Daffodil

Daffodils are so pretty! While at a soccer tournament last weekend we went on a walk to a local library and found all kind of things to take pictures of. I was pleasantly surprised to see this, I didn't think that I would see many flowers this time of year, especially then. It was mid 40's all weekend!

Nature Walk

So on Sunday I had 2 soccer games, but I couldn't play because I hurt my knee (again).

So since the team has to warm up for 45 minutes I took the opportunity to take a bunch of pictures of the wonderful trees!

I thought it was so cool. The top was all orange and the whole bottom half of the tree and the whole inside was yellow. I bet if I wen't back now there would be more orange.

I love the sound when I am walking through a bunch of leaves..

I loved seeing the orange leaves against an all yellow background, so pretty!

I really need to get one of these. Someone that we live close said I could go dig some little saplings up from her yard so if I ever get around to getting over there I will have some itty bitty ones!

I love wearing cozy boots this time of year, this pair I got brand new for .75 at a thrift store(score!). They get uncomfortable if you wear them for too long, but I try not to wear them for too long.

I got a big handful of pretty leaves to bring home, I plan on doing some kind of craft with them, any ideas?

Corn Field

Over the course of this year I have taken quite a few pictures of the cornfield.

I enjoy the corn, and so do the chickens. The first 4 or 5 rows would always be embarrassingly empty.

We would build memories with it all year long.

I remember the younger chickens getting lost for a couple hours, me crawling around the muddy field on my hands and knees trying to get them out with no luck. Then them coming out and laughing at me like "Haha I wasn't really lost" Meanies..

Oh, right, those were the fun times..

Here is a look at the corn over the year.

The is the somewhere in the middle but actually closer to the end corn.

Then no corn.

Then we have to wait till next year, so we can trample half the field running through it like mad people (okay we only do this every year or so..), picking a bunch for the chickens, ducks, goats, and even the weird cat.

Rural Thursday

Hello everyone!

The woods are so lovely right now, unfortunately none of the trees are kinds that change colors!

In the next month or so we are going to get some Maple's and Oak's that we can plant cause I want some trees that change color!

In the whole time that I have been into photography (only since early this year) I only ever took a couple pictures of this little brick building. So the other day I went outside and took some closeups.

We have never used it for anything but I still think its cute.

These are the pictures that I took earlier this year.  I took them only 2 or 3 days after I started taking pictures. I personally think I have come a long way in the photography world.
