SHS 11.24.12.

Hello again!
This week was full of cooking and cleaning, but that is what usually happens every year during this time of year! Love the Thanksgiving theme this week... And don't forget, I have a big blog makeover coming up, can't wait to show it off! Now on to the hunt.


I am always thankful on Thanksgiving, this is one of the many things we made on Thursday.

 This was my big dish for the holiday, mashed potatoes with goat cheese and chives, or in my case, parsley, because it turned out we didn't have any chives!

 I've been getting a couple cookbooks lately, really just a couple...

 Made some applesauce today and it was bubbling like crazy!

 There were lots of trees when we went on a little weekend getaway.

Happy Thanksgiving!

Hello hello everyone! I just wanted to quickly say...



I am thankful for my family and friends.
I am thankful for soccer and my camera.
I am thankful for my chickens and cat Billie.
I am really really thankful to have all of you guys, and my blog.
I am thankful that I am able to be assistant coach for a U11 girls soccer team.

Little Mushroom

Hello hello! It feels awesome to be blogging again after a week off. Today I'm doing my weekly routine of Texture Tuesday.

So my sister and I were in the woods looking for cool things to take pictures of and I saw this perfect little mushroom, I took a few pictures and this is my favorite!

Hello hello! I decided to take a break from blogging this week, but I am happy to be back!
I am off to spend the weekend at a waterpark so this will be another quick one...

SHS 11.10.12.

Hello hello! Once again I am in a hurry, I have ODP soccer (Olympic Developmental Program) tomorrow!
So here we go...


I found this cool little mushroom outside, it was tiny!

Migas

Hello hello! 
Today I am sharing a recipe that I made on Sunday, it is called Migas.
It is basically a flavorful scrambled egg dish made fabulous with the addition of veggies, corn tortillas and lots of cheese. The ingredients list is enough for 6 servings but I adjusted it so it would be just enough for two people.

Ingredients:
1 medium onion
1 red bell pepper
1 green bell pepper
4 tomatoes
1 or 2 jalapenos
10 to 12 large eggs
1/4 cup half and half
Salt and pepper to taste
4 corn tortillas
Canola oil for frying
1 TBS olive oil
1 TBS butter
2 cups grated cheese
1/4 cup chopped cilantro
1/4 cup sour cream


Begin by roughly chopping the onion, bell peppers, and tomatoes.

I would have chopped the tomatoes but we only had frozen ones so they were already in chunks.

Then some eggs and just a splash of half and half. Whisk lightly. Season with salt and pepper to taste.

In a small skillet, fry the corn tortillas in canola oil until just barely crisp. Don't overbrown.

Drain the fried tortillas on a paper towel, then place on a cutting board. With a sharp knife, cut the tortillas into strips, then turn them the other way so they are in squares. Set aside.

In a skillet over medium-high heat, cook the onion and bell peppers in the olive oil until they develop a little color. You want the veggies to have some brown and black areas, but not be soggy of soft.
And I forgot to take the next picture, but you will want to put the tomatoes in and cook for 1 minute.

Then throw in the tortilla chips. Stir the mixture and reduce heat to low.

When the skillet has cooled slightly, pour in the egg mixture.
mix little by little, making sure it doesn't stick to the bottom.
When the eggs are cooked throw in the cheese and plenty of chopped cilantro (I forgot the cilantro...).

Now this picture really doesn't do much justice, it was SO much better then it looked. Next time I will have to put more thought into it.

Now I did actually right down my parents and little sisters reactions so here they are:

Mom - Mmm, very tasty. I like the veggies, but needs more green.

Dad - Tortilla needs to be added later. Its wonderful, though.

Lil' Sis - Mmm! Its SO GOOD! I love it!!!

The Mystery Flower

Hello hello! I am once again linking up with Texture Tuesday, I love participating every week!


I don't know what this is, but it really made a wonderful subject for me to shoot.
It was a very rainy day but every time I tried to take a picture the background had a bunch of stuff I didn't want in it. So I got a white piece of card stock paper and was walking around with it and placing it behind what I was trying too shoot. It worked out very nicely : )
